Kaju Pista Roll !!!



My love for sweets is immense... so always try to prepare something new n satisfy my cravings...
When i was a child i remember my moms desserts range was limited to sheera's n payasam...my dad usually bought sweets from sweet stores for any of the occasions..
Even i used to follow the same until we moved abroad but the scenario here was quiet different and we didn't like the sweets that were available in freezer section of Indian stores ..
Then i realized n started to brush up my cooking skills ...Finally i am here now blogging for you guys...
So here is My first Post "kaju pista roll " !!!
Yumm yumm ...love the texture n the way it turned out !!!



                   
Ingredients....
1 cup cashews
1 cup Pistachios
3/4 cup sweetened condensed milk
3 to 4 drops  green food color (optional )
2 tsp clarified butter / ghee
2 tbsp milk powder
1/2 cup powdered sugar
10 to 12 saffron strands
1 tsp each cardomom powder n rose water

Method..
First n fore most grind the cashews and pistachios (DE shelled) separately into fine powder...
sieve them separately so that any lumps that are formed while grinding are broken...
Now dissolve the saffron stands adding a tbsp of warm water...
In a thick n heavy bottomed pan add the ghee, condensed milk and powdered cashews..Mix well ...
Add milk powder n rose water n start cooking this mixture on a medium flame until it starts to leave the sides of the pan n forms soft dough...keep stirring continuously to avoid any burning.
This might take 10 to 12 mins..(patience is virtue )
Now turn off the flame n transfer this on to a plate to cool it down a bit..

Meanwhile in a bowl take the powdered n sieved pistachios along with powdered sugar , cardamom powder , green food color n make it into a soft dough using water ..( add water little by little )
Do not over knead as it might start releasing oil.

Start rolling :...
Take a rolling board n spread a cling film on it ..you can stick it with cello tape on the sides for additional grip...
Take a lemon sized cashew dough n cover it with cling film ..now roll it gently into an oval shape..
Now take a portion of pistachios dough and make a cylindrical log out of it ...now place this on the cashew dough n roll into perfect log sealing the edges...
Now similarly make with the left out dough as well...
I could make three logs out of these quantities...
Now slice of the edges and cut these logs into 2 to 3 inch pieces...
Kaju pista rolls are ready ...Now decorate the tops with saffron water ...
Rolls are ready to be served !!!
