Moong Dal Halwa !!!


Moong dal halwa...can never get enough of this goodness...always wondered how the store brought n restaurant made halwa was so succulent n mouth melting...
Worked a lot on this beauty inorder to get the perfect outcome ..
After so many trials n errors atlast i could nail it n deliver the same as theirs...
Glad i made it to the perfection....
      On special request from my cutie friend Preeti ...Presenting Moongadal Halwa....


                          Ingredients :
  
1/2 cup Split Yellow Moong dal
1/2cup ghee
3/4 cup cup sugar ( more or less according to preference...)
1/4 tsp cardamom powder
Few  strands of Saffron 
2 cups water
1 tbsp of  chopped nuts ( cashew n pistachios for  garnish )

                                       Method :

Before heading into process ...
Firstly wash the dal thoroughly n soak it in enough water for 2 to 3 hours..
Drain the water and blend the dal into a thick paste ..add very little water if required , for easy blending..
        Now into the process :
Boil water and sugar in a pan over medium heat for about 3 to 5 mins...
We just want the sugar to melt ..no string texture required..
Remove from the heat ...add the saffron strands n set aside...
      In a non stick pan ( a must )  add moong dal paste n melted ghee..
Stir well..
Now turn on the heat on medium and start roasting the dal paste stirring continuosly...(as the dal paste sticks to the bottom stirring is important )...
Gently Press the dal paste n fold it over...and press again n fold...this ensures the even cooking of dal..
      After a while u will notice the dal turning grainy n golden ...this takes somewhere around 15 to 20 mins...so be patient...
The dal after frying smells aromatic n sweet..

You will also notice ghee seperating...
This means dal is cooked..
Now lower the heat and add sugar syrup little at a time n keep stirring..
        The syrup will splutter so be cautious..
After adding all the syrup , stir well ..
Close it with a lid and cook for 2 to 3 mins..
  Remove the lid , stir n cook for another minute...
 Now its done so , Turn off the heat...
And add the cardomom powder n stir well...
Garnish with chopped n fried nuts..

Let it cool for a min ..the Moongdal halwa is all ready to be served..
Tastes better when served warm...
