Schezwan fried Rice !!!


Schezwan rice !!! 
When you crave for something spicy for lunch or dinner , then Schezwan fried rice is a real good option ..
Quick n easy to prepare if u have schezwan sauce handy ...
Takes as less as 10 mins...


                            Ingredients :
For sauce :

Garlic (finely chopped ) : 1/4 cup
Ginger ( finely chopped ) : 2 tbsp
Olive oil : 3 to 4 tbsp
Red chillies : 10 to 12
(Depending on spice )
Soya sauce : 1 tbsp
Vinegar : 1/2 tbsp
White pepper powder : 1/2 tsp
Tomato ketchup : 1 tbsp
Salt to taste
Water : 1/4 cup
                            Method :
Firstly Cut open the red chillies n remove the seeds.
Soak them for an hour in hot water..n grind into fine paste...add a few spoons of water if required ...
In a pan add oil and the finely chopped ginger n garlic .Saute for few minutes till the garlic turns golden..

Add the ground red chilli paste to it..mix well n cook until oil oozes out...

Now add the soya sauce , vinegar and pepper powder..

Stir n add tomato ketchup and salt as well..
Now add in water  n stir well ..bring this to a boil ..

Now the sauce is ready..
Once cooled ..you can store it in refrigerator for upto 15 days ..



                     For the schezwan fried rice :
1 cup Basmati rice (wash n cook )
1/2 cup chopped mixed veggies like carrot, peppers, green beans n spring onion..
2 tbsp schezwan sauce
1 tbsp garlic chopped
Salt to taste
2 tbsp olive oil
1/4 tsp pepper powder
                         
                       Method :
In a non stick pan ..add oil ..once hot add the chopped veggies along with chopped garlic n chopped spring onion whites....

Saute for a min until garlic turns golden..
Now add in salt n pepper .. stir well ..

Next add in the schezwan sauce ..stir well...
Lastly add in cooked rice ..toss it until well mixed...

Simmer for a min or two...
Garnish with spring onion greens!!!
Ready to dig in !!!
