Cranberry and Mascarpone Muffins !!!

A Big thanks to my friend Martha who shared this awesome recipe during our short stay in Germany...from then on my kids have become great fans of it...
"Cranberry n walnut muffins with Mascarpone" filling ...
Wholesome goodness !!!
Make and enjoy !!!

                              Ingredients :
  • 1 (8 ounce) package mascarpone cheese, softened + {1/2 cup additional mascarpone cheese mixed with 1/4 cup of sugar ( optional ) }
  • ¼ cup butter, softened
  • 1 egg  (at room temperature)
  • ½ cup milk ( at room temperature )
  • ½ teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • ¾ cup white sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 Tablespoons lemon zest
  • ¾ cup dried cranberries , 1/2 cup chopped walnuts (optional )

                                        Method :
  1. Preheat oven to 400 degrees F or 200 degree C  . Prepare a muffin tray with liners or grease with butter n dust with flour.
  2. In a bowl stir together the mascarpone and the butter that are at room temperature . Now Add the egg,  milk and vanilla.
  3. Now sieve the flour along with Baking powder.
  4. In a separate bowl whisk the flour mixture ( i.e with )baking powder , sugar, and salt. Stir in the lemon zest.
  5. Add the flour to the mascarpone mixture until just combined. Do not overmix! Fold in the cranberries and walnuts.
  6. Spoon batter into prepared muffin cups filling them ¾ full.
  7. For extra wow factor add a half spoon of marscapone half way through .. ( first goes a spoon full of batter then half spoon of marscapone then a spoon full of batter )
  8. Bake for 15-17 minutes, depending on your oven. Let cool on a wire rack.
  9. Serve with hot cup of tea / coffee !!!
